GOING TO MAJORCA? DINNER AT SCHWAIGER XINO'S IN PALMA IS A TENTATIVE FINE DINING EXPERIENCE

In December, we were invited by Gerhard Schwaiger, one of the most distinguished names in the international culinary scene, to review his renowned rooftop restaurant in Palma de Mallorca, Schwaiger Xino's.

Awarded two Michelin stars for his relentless creativity and ideas throughout his 19-year career, Gerhard now offers guests tempting new versions of dishes with a completely new approach.

Stepping off the elevator that took us to the rooftop, the restaurant looked inviting with its intimate, industrial-chic décor.

Upon entering the restaurant, before being shown to our table, we were asked to show our Covid certificate and sanitize our hands – ensuring the safety of all guests.

The modern interior, in shades of dark grey and warm wood with ambient lighting, was very inviting, and next to the tables was a small side table for resting your purse and phone – a lovely touch that kept things tidy and in keeping with the restaurant’s industrial decor and warm atmosphere.

We're greeted at our table by Cristina Pérez Paíno, "The Boss," who came to the island at Chef Schwaiger's invitation to train with him for eight years. She then traveled to Germany to hone her skills at the renowned, two-Michelin-starred restaurant Tantris. It was there that she honed her skills before returning to Mallorca and working in the hospitality industry as a sommelier and maître d'.

After cruising the South Seas aboard a luxury yacht as Chief Steward, where she was available 24 hours a day to the most demanding clients, she returned to her starting point to launch a new project, known as Schwaiger Xino's, together with Chef Schwaiger.

And it shows… her professionalism and experience, along with the meticulous attention to detail from her sublime team, made us feel truly special. They took the time to welcome us and inform us about the five-course tasting menu we were about to enjoy, as well as the wines they would pair with each course, previewing what we would soon be enjoying.

The five-course tasting menu we were invited to was nothing short of a culinary feast.

Our first course was marinated tuna with chives, white onion, green olives, and trout caviar, paired with the magnificent IGP3 Riberas – Las Fincas 2020 from Bodegas Chivite. Next, delicious scallops with yellow tomatoes, parsley ravioli, and lemon sauce, paired with the DO Somontano – Enate 234 2020 from Bodega Alto Aragón.

For the third course, we were served juicy veal tenderloin and cheek with turnip, mushrooms and white pepper sauce, accompanied by DO Ca. Rioja – Marqués de Riscal Reserva 2016 from Bodegas Herederos Marqués de Riscal.

To conclude this wonderful tasting menu, we were offered La Peral cheese marinated in cider and fig mustard, served with walnut bread and paired with DO Jerez-Xéréz-Sherry – Cream by Fernando de Castilla, and a wonderfully prepared chocolate mousse with tangerines and white chocolate cream, a delicious dessert paired with DO Málaga – Molino Real “Mountain Wine” 2014 by Vinos Telmo Rodríguez.

Finally, we'd like to express our appreciation to Stefan Brunner. Despite only being 26 years old, Stefan has extensive experience in the kitchens of some of the most renowned restaurants in Austria, England, and Mallorca. Stefan's rich, modern brand of traditional cuisine is reflected in every creation, along with the influence of his native Austria. After two years working alongside Cristina and Gerhard at the legendary restaurant Tristán, Stefan is now part of the new Schwaiger Xino's project, bringing his love of cooking to offer dishes brimming with Mediterranean spirit.

Schwaiger Xino's has it all – dishes that are a feast for the eyes and a high-class delight for the palate, served by an excellent team that is passionate and professional, in a minimalist and modern setting, making a meal at Schwaiger Xino's an exquisite experience.

We can't wait for our next visit in the summer to enjoy the gorgeous rooftop terrace and their signature dish – the Panamera with 5 senses:

A broth made with renowned Wagyu beef, sirloin, and black truffle from Spain. Celeriac ravioli, Enoki mushrooms, tender peas, puff pastry stuffed with Jabugo ham, chives, and a quail egg in golden bread. This broth is pure power and is the heart of this dish, prepared with the most luxurious ingredients in the world.

A dish inspired by the new Porsche Panamera and a quote from Ferdinand Porsche:

"We build cars that no one needs, but everyone wants.".

And that perfectly defines Schwaiger Xino's: you don't necessarily have to eat dinner at Schwaiger Xino's, but everyone definitely should!
